Subject: [GPC] Cranberry Oatmeal Chocolate Chip Cookies From: "Kenyon, Emily" Date: Fri, 18 May 2007 12:25:12 -0700 To: "gpc (E-mail)" By popular demand, and with many thanks to my high school friend Sarah French and her husband Steve Keach, who developed it, here is the recipe for the cranberry chocolate chip cookies I make (dough for) for the century most years, including this one. Sarah and Steve have kindly allowed me to share their "secret" recipe. But I get first dibs for using it each year for the century! Keach Cranberry Chocolate Chip Cookies (makes about 1 gallon of dough) 2 sticks margarine 5/8 c canola oil 3 c white sugar 1 c brown sugar 6 egg whites (I used 9 oz of the "just whites" stuff you can buy at the store) 4 c quick cooking oats 1 Tbs almond extract 1 tsp allspice 3 c all purpose flour 1 c whole wheat flour 1 tsp baking powder 1 bag (I used 2 c) semi-sweet chocolate chips 2 c dried cranberries mix margarine oil and sugars together until blended. Add egg whites and almond extract, then flours, allspice, baking powder. Beat until mostly blended, then add oats, cranberries and chocolate chips. Bake at 350 degrees for 10-15 minutes. The trick is to not overbake them, or they get pretty hard.
